Tasty souls!
I've drawn up a small number of soul vore related sketches! I'll post all of them here as well as any more i sketch up in the future! :3

Soul Vore super skeezed me out in my younger days. Perhaps in part because I was raised Christian and there is a HUGE emphases on the sacrality of the "immortal" human soul. It took a long time for me to overcome related emotional and moral challenges there. In time though, I have developed an appreciation for soul vore in specific contexts. Currently, I feel Soul Vore in this context is a waste of the physical body (Just for conversation sake, not to judge you. <3), and have a character that prefers to eat the body to fuel his own, and retains willing souls to fuel his Dreamscape, which fuels his more fantastical powers. Those that do not wish to give Sliv'oth their soul after being eaten, pass on to the afterlife of their, likely predetermined, choosing.
Outside of that, I have been able to enjoy soul vore in both art and stories, especially when the tone feels good for all involved. Even when in a tone I dislike, I can at the least ignore it or comfortably talk about it in a civil manor.

"What happens to the body?" Is something i think comes up pretty often and is very reasonable to think about. I'm personally in favor of the prey's body becoming a servant to the one that holds the soul, especially in cases where the soul stealer is alot smaller in size. Altnatively, having the body in some way experience major change to reflect such an important loss can make for an interesting story too.
I feel that Soul Vore probably benifits the most from having context and such, just because it can go from something spicy to something horrifying real quick if youre not careful, especially when taking into account that by stealing a soul its being denied an afterlife until released.
I like your idea about consuming the prey and keeping the soul if its willing. I cant remember where, but I remember coming across a species that someone made that did something similar, but would also reform a body for the soul too.

From creating a thrall that is a soulless husk, to the body becoming more of a remote control avatar of the soul the predator holds onto both have powerful story telling potential! I've used the later myself, on occasion. Wether the soul is held by Sliv'oth and the body is remote, or the soul is given to the body, and returns to Sliv'oth when the mortal coil is broken varies in each narrative.
Having the body experience a change is neat too. Perhaps similar to the fey 'pacts' in the game Drakenguard or similar. In that mythos, the person making the pact gives up something integral to them, and are physically marked, in exchange for the life long aid of the fey creature, or dragon in the case of the main protagonist.
I wonder if you're recalling Ink, from a story written by Mahiri. A large goopy monster like creature that consumed their prey and retained their soul, while creating a duplicate of them to live out their life's dreams in their place, allowing the prey to experience that life vicariously through their double.

Might have to look up drakenguard too, havent played that either.

I strongly recommend the story! Drakengaurd is pretty dark from start to finish though. It was a ps2 game. I loved the dragon in it.

Peeked in out of curiosity and caught talk about DoD(Drag on Dragoon)/Drakengard!
It's quite the series, and if you've heard of the Nier series, its' origins are the secret ending from Drakengard 1!
DoD1 is...quite a game, but as Wolfy said, the nature of pacts is very interesting. There can be some very...esoteric, weird, and surprising stuff in the story, but it is still a game I heavily fixated on in my teenage years. Admittedly, I liked the gameplay of DoD2 the most, but I'd still recommend the series in general(and absolutely the Nier games as well)!
